Pressure-Cooked Wild Turkey Legs

Sorry, I didn't take any pics. But for those of you fortunate enough to harvest a turkey this spring, save those legs and thighs!

2 whole turkey legs (bone in)
3 cups water or broth
1 onion, chopped
4 sticks celery, chopped
half stick of butter
kosher salt
black pepper

Place all ingredients in pressure cooker (or instant pot). Seal lid and heat to 15 psi. Cook at 15 psi for 70-90 minutes. Remove from heat and allow to depressurize on its own. Remove legs (carefully) and place on plan... Broil in oven for 5 minutes or so, just long enough to brown them up a bit. While doing so, mix some water and corn starch... Add to remaining juices in pot and simmer to create a gravy. Pour over legs and serve with noodles or brown rice. It's phenomenal.

If you don't own a pressure cooker, you can do the same with a crockpot. It just takes longer.

Gonna have to try this. Saved some legs this year, also wanting to try and smoke one all day after a day of brine.
We have an instapot we used once. Those things seem pretty sketchy. I call it the kitchen bomb. Might have to give it another go if itll fit.

As soon as my wife lands another 30% Coupon for Kohl's I plan on buying an Instant Pot. My pressure cooker works well, but it's 16 qt and is overkill for most cooking applications.

Brah, you are missing out by not using that thing. Wings in minutes, baked potatoes in minutes, ribs...whatever you want. Great for nasty weather days when don’t feel like grilling. Even burgers are good.
They're soooooo sketchy to me tho. And then I'm like well if I tried to make one of these it would for sure blow up. And some kid in China is prolly pumping 100 of these out a day. 🤔🤔😂🤣
But u say wings in minutes.... hmmmmm

I do not recommend venison in it...easy to overcook and over cooked venison is dry and horrible tasting. Big fatty beef roast is almost better over cooked.

So venison and a good scoop of pork/beef fat? Hell just wrap it in bacon

Alright, I've got lots of venison roast frozen. Do you just toss it in there with the veggies and some mushroom soup?

Set pot to saute and add a little EVOO, sear on all sides.

Place roast in pot with a few cups of beef broth and whatever seasoning you like. Subtract 1 pound and set to high for 20 min per pound if thawed, 30 minute per pound frozen. Yes you can just drop a frozen roast in that sucker.

Once done, add vegetables and cook on high for 20 min.

Ok. I tried it. It didn't even explode! Homemade buffalo sauce. 13 minutes from frozen to falling off the bone.

Instapots and pressure cookers are amazing. And if you keep the pressure regulators clean, they're perfectly safe. The only time I've heard of a pressure cooker blowing up is if you don't take care of it, or are negligent. And even at that, I've never actually talked to anyone that's had a pressure cooker accident.

I made the mistake of looking up explosions. Man can they really mess a kitchen up good.
