So, I'm at my "gun guy's" shop buying a pistol for my daughter, and he offers me one of some cookies his wife had made.
It was so good I refused to leave until they gave me the recipe.
Easy to make and fantastically sweet and rich - don't eat too many! :smiley_coolpeace:
1 cup soft butter (two sticks)
2 cups flour
1/3 cup whipping cream
Granulated sugar
Mix like pie dough - mix butter, cream and flour - cover and chill.
Roll out half of the dough 1/8" thick (rolling out only half and leaving the other half chilled makes the dough easier to work with)
Cut the dough into 1.50" circles. Transfer circles with a spatula to waxed paper covered in sugar. Coat both sides of the cookie with sugar.
Place sugared cookie on an ungreased cookie sheet. Prick with a fork 4 times (16 evenly spaced holes)
Bake at 325 degrees for 4-7 mins or until set, but not brown. When cool ice one circle with filling then top with another to make a sandwich.
the filling:
1/2 cup (one stick) soft oleomargarine
1-1/2 (1.50) cups powdered sugar
2 tsp vanilla
Mix thoroughly then cool
