Deer neck meat

Ha. She didn't mention anything about removing those delicious milky white lymph nodes before cooking it. You know... The ones your processor just grinds into the burger for that special extra flavor. Lol

Never mess with them. There are something like 300 lymph nodes in a neck. It's their job to filter toxins, disease, cancers and other harmful stuff from the animals body. Including pesticides ingested from plants and heavy metals found in creeks. The next time you butcher a neck cut open one of those white lumps and you'll see that it has a nasty brown or black center. Nope. I just leave it.
 
Looks good Mike and I hope it was. I always go through a neck real good and get rid of everything that looks foreign. I've ground up neck meat for like 37 years with no ill effects. Once in awhile, I do feel the need to rub my head on a tree though.rotflmao
