Why do fox and coyotes always start in the croch area first when they find a kill before the hunter does?

Here is Mr. Fox caught in the act of stealing a set of "mountain oysters" from one of my gut piles.

Easier for them to grab and rip off to expose the big back leg meat on the rump. Also a fast way to get the higher protein and most nutrition in a quick manner before others find the carcass.
