Making any kind of bacon is a time eater, but it is usually well worth the effort. Good bacon is hard to come by with just money.

Norwayne schools are in our athletic conference and my son played them the other night. Bearded butchers are less than a mile from the school.

that's basically what it is.... you really mix the meat to get extra protein extraction which helps it stay together. The seasoning and being cooked with smoke is what brings the flavors of bacon.

Just another way to use trim if you don't like ground venison and I'm all for that but it's not bacon.
