Holy smokes does this look incredible! Definitely a time consumer but thought I should share with you guys!

I did it about 15 years ago. It ended up like meatloaf. Maybe I’ll try it again since a recipe is available now.
that's basically what it is.... you really mix the meat to get extra protein extraction which helps it stay together. The seasoning and being cooked with smoke is what brings the flavors of bacon.

Just another way to use trim if you don't like ground venison and I'm all for that but it's not bacon.
