Tonight I made my version of Alice Springs Chicken. First get all your ingredients together which include grilled chicken breast that has been butterflied in half (did it on the gasser rubbed with EVOO with S&P), sauteed mushrooms and onions, bacon, cheese of your choice (colby, colby jack or cheddar taste best IMHO) and some honey mustard (I am including my super easy recipe for honey mustard at the end, your women and/or kids will love it).
The build is simple. Preheat your broiler on low and place chicken on an oven safe sheet. Use something with sides so the juices don't make a mess of your oven. Give the breast a good coating of the honey mustard (one child got bbq sauce because she doesn't like honey mustard), next the mushrooms and onions. Add a couple slices of already fried bacon and the cheese of your choice. I had colby jack laying around so that is what I used.
Throw it under the broiler on low for around 3 minutes. Great, easy meal.
