Bluegills...again!

I think you guys are nuts. Bluegill are great (but thin), crappie are a little mushy but still pretty good. Perch, when caught from clean water, is by far the best fillet to be found....IMO of course. I will say though, if the only perch and walleye I'd ever had came from Lake Erie, I wouldn't have such a high opinion of the perch. I am a big fan of bluegills too, but perch has 'em beat to me.

Crappie is good, but man they just seem "mushy" as you stated. Any tips on "crispin" them up?

Yeah. Filet them and fry in really hot grease. Hotter than normal.

Perch leads by a good margain to me.

You like catfish more than crappie?!?!?!?! Dang man, you've got some strange tastebuds.

Just curious on what you guys normally use for crappie?

Normally, my go-to is pretty simple... minnow under a slip bobber. But sometimes I'll switch to a white or chartreuse maribou jig, or a white twister tail. If you go with a jig or other artificial bait, lighter the better IMO. An ultralight rod and reel combo is often a must.
 
Catfish isn't about the taste (even though I do love a properly prepared filet) as much as the memory of eating them as a kid. We didn't mess with bluegills as much. We ate catfish often.

My favorite fish of all is mahi-mahi or grouper.

Exact same here, I use a 12 foot jig pole with my setup, no reeling required, dip it in, set the hook, and pull the fish right back to your lap! I Crappie fish 99% of the time with minnow under a slip bobber.
