Here is what I made for Christmas dinner this year. I did two (2) 8.5 pound NY Strip roasts. Last year I made the roast with my Sous Vide, and then finished the meat on the grill. This year I decided to try smoking the roasts. The rub was made from scratch, and I had salted the meat for 3 days before Christmas.
