Some homemade tomato soup and grilled cheese on homemade wheat bread.

A few years ago I started putting up "creamy tomato basil" soup instead of canning all of our tomatoes. I made 12 quarts last fall, put up 10 of them. I'll probably have some prime rib grilled cheese and tomato soup for dinner tomorrow. :) I also put up 4 quarts of smoked butternut squash soup, and 6 quarts of Cream of Chanterelle mushroom soup base when I had piles of mushrooms back in the summer. The mushroom soup has to be finished with egg yolks and cream, so I can only freeze the mushroom/shallot/velouté base. I made/finished a batch of it a month or so ago and it was as good as, maybe better than making it fresh. I am big fan of soup. Good soup, that is.

The wife’s was creamy tomato basil as well. She actually added a little more cream to it as she said it wasn’t as creamy as when she put it in the freezer.

I made 10 quarts of Chili three weeks ago, froze 4 quarts of that, too. I was happy to eat a gallon and a half of that before I decided to save some for later. Well, I did let Nancy have some, too. :) Next up is probably going to be vegetable beef soup. Going to try to get some GOOD beef bones with some meat on them for the stock this time. Neck bones or oxtail if I can find it.
