I actually read an article not too long ago that said that the market was out-pacing subsidies and the economist expected it continue to do so and overcome it (huh, imagine that? supply and demand is smarter than the government!). I'll have to look for it.

Well anytime you subsidize a product to a point where it is sold for less than it costs to produce people will figure out millions of ways to use said cheap product. Thus demand will increase exponentially as new ways are found to use it or ways to lower cost of an end product. Ie high fructose corn syrup when sugar would work just as well and be a better natural ingredient. Like the aforementioned cow we too are being fed shit we aren't supposed to eat because its cheap.
