Well, its been 2 weeks this last friday. At 14 days of curing, we had a great new years meal and cooked up the back straps. De-boning the quarters tomorrow. What i dont drop off to property owners tomorrow will hit the freezer. Write up has been in the works for a while. It's a coming.
