Maple Syrup Making

I let holding tank simmer over dying embers and covered with cookie sheets with a 1” gap to let steam off overnight. Tank was still pretty hot and brown sap was 95 degrees. Fired back up rolling steam for another hour then drained off two pots to finish on stove and poured into evaporation tank the 9 cold jugs of sap plus another 2-3 gallons of sap I pulled off trees this morning. Rolling steam with fresh sap outside and inside cooking down the brown stuff that’s close.
