Here is the Brunswick Stew recipe that I used and was given to me. I add the butter and seasonings when I add the potatoes.
6 gallon Brunswick stew
5 lbs Chicken
5 lbs stew beef
10 lbs potatoes
5 lbs onions
1 gallon corn 1 regular 1 creamed 128oz
1 gallon Lima beans 128oz
1 gallon crushed tomatoes 128oz
1/2 bottle Worcester sauce
2 sticks of butter
1 bottle Texas Pete
3/8 cup salt
3 tbsp pepper
2 gallons of water
1. In the pot bring the water to a boil and add all the meat and cook/ stir for about 2 hours (or until the meat is separating). Smash the meat with the ladle.
2. Add the potatoes and continue stirring until they are breaking apart (about another 2 hours). Smash the potatoes with the ladle.
3. Add tomatoes and stir until the consistency is smooth.
4. Add lima beans and then stir for about another 1 hour. Add corn (creamed and whole) and stir until even consistency.
5. Add butter and seasoning to taste, then turn off heat to pot and stir until it is cooled enough to not stick.
Total cooking time is about 6 hours depending on the size of the batch and weather conditions (allow extra time when it is very cold).
