Makes me think... I went hiking last week, cooked some quality meals from leftover foods and even surprised myself with their quality. I did chicken pockets as described here: https://under-the-open-sky.com/five-great-food-ideas-for-your-outdoor-adventure/ The guys loved it. I also recommend foil recipes - you can lots of cool things with foil when you’re grilling in nature and it's easy to pack.
