spring salad with fiddleheads and raspberry vinaigrette dressing. fresh cut steamed fiddleheads, raspberries I picked last year in dressing, fresh spinach and arugula from the cold frame, grape tomatoes, Feta cheese. Dijon crusted grilled chicken thighs because we aren't douchebag vegans.

Only pic I took. 1st time doing a chicken on the pellet smoker. Rubbed down in McCormick's mesquite seasoning. It was juicy as hell and damn good. Also did a beef loin on the smoker

Well we had some friends over. We had pepper poppers, chips and dips, fresh fried catfish, fries and fried okra. Homemade banana pudding and other desserts. It rained about 3 hours when everyone showed up. Lightning was all over and had one strike next to us. Instead of a loud crack, it was a loud snap, then a boom. Don’t know where it hit but all is good. Was a great 3 day weekend.
Flat iron grilled to medium rare, seated with butter on cast iron and glazed with a bourbon glaze similar to the Friday's jd glaze

Well got home and momma was almost done cooking. Yup you guessed it.... fried backstrap, squash and eggplant. Southern people fry a lot. No pics, sat down and woofed my plate, maybe next time.

I didn't post anything beforehand , but on Sunday I smoked up a couple racks of ribs & shit load of wings. Pretty much the same ol same ol, but with one rack I used ground coffee & garlic powder for the rub. Never done it before & I was very impressed with the outcome.
