Jesse all the fancy names aside that looks incredible!! Not something the rest of my family would even try but that would be OK, all the more for me!
Tonight was another good one. Seasoned up some free range chicken breasts with olive oil, S&P and some smoke paprika. Good hard sear in the cast iron skillet, then in to the oven to finish. Prepped some organic peas and 23 herb long grain rice while the chicken finished. Once the chicken was to temp, I topped it with some locally sourced bacon, sharp cheddar and queso fresco, then popped it back in the oven to finish. Drizzle some homemade honey mustard over top and chow down!

Sunday we tried a new marinade. It was a good decision. Venison steak grilled medium rare...
Today was venison roast Mississippi style. So good and so damn easy.
1/2 cup water
1/2 stick of butter
Pepperoncinis
1 pack dry ranch seasoning
1 pack brown gravy mix
Turn in low for 6 to 8 hours. Remove roast from the crockpot. Pull meat apart and mix back into the goodness in the crockpot for 30 minutes. Enjoy.

Tonight we are down the street at the in laws. The women are wrapping gifts while the guys watch the rugrats. I volunteered to to dinner. These people are impossible to cook for, my wife included. They all hate onions, shrooms, peppers, anything spicy, you know, all the good shit. One thing they do like is just plain fried venison backstraps. Their favorite is cubed steak and mashed taters. So I took out a large neck roast from my buck and broke it down and ran through the cuber into perfect portions. I then dredged in flour seasoned with onion powder, lawry's, and granulated garlic, then browned them in the frying pan. I then transferred to crockpot and topped with beef broth and 1/2 cup soy sauce. For once I did take some before, during, and will get some after pics to hopefully post later
This meal comes with a little story. We moved away from family a couple of years back and when it came to Christmas Eve dinner it became a depressing realization of feeling alone. As our little family of 5 decided what to do about it we rested on a day of PJ's, movies, snacks, and everyone makes their own homemade pizza. It's on its third year now and it's a day we all look forward to!
No complaints as we all put exactly what we want on our own pizza. Mom spends about an hour making the crust with the kids. Easy clean up! Merry Christmas folks, it is what you make it.

After a day of being in the out doors all day, there's nothing better than a bowl of chilli with a peanut butter sandwich.

Tom, is that a bottle of Chateau St. Michelle I see in the background? the cabernet is one of our favorites. that is a fine looking hunk of meat, too!
made it up to 13° here today, wind chill did not make it to zero. perfect day for feeding the wood stove and dining on some home made clam chowdah in home made bread bowls. ice cold T&T to wash it down.

Yes good eye jamie. we like their cab amd harvest sweet Riesling. We have been to the winery a few times as well. Im making cowder with razor clams we dug on christmas day this weekend.
I have soup beans on right now and damn does the house smell good! We received a free ham for Christmas thanks to the generosity of some folks that work with my MIL. I divided it up into steaks and cubes, then vaccum sealed it. Today I took a pack of cubes and put them on a pizza pan that has holes in it, then fired up the smoker and cold smoked them for an hour. Everything is in the Dutch oven simmering right now. Should be ready around 7!
My wife loves soups, me not so much. UNLESS it's cold! I've done chili, homemade chicken noodle and now soup beans. Time to make some potato soup next.
I use 2/3 great northern and a 1/3 dark kidney. I like the contrast in color for aesthics. First time I made them, I roller that way and never looked back.
