What's For Dinner?

I spent the July 4th weekend drinking Natty Lites and cooking over wood at Deer Camp and in my backyard.

Ribs, chicken, corn, Deer burgers.

I've been slacking on this thread something fierce, but I see some of you fellers are doing it up right! Always makes a man hungry to stroll through this thread!

Tonight I went straight off the cuff and made what sounded good. Took two bone-in chops from the hog we butchered this spring and simmer them in a cover cast iron skillet at 275 for 2 hours. I seasoned them with a couple pads of butter and some pineapple habanero BBQ sauce. I made a ragu of the first squash and zucchini from our garden, along with shittake mushrooms, shallots, cider vinegar and seasonings. A couple slices of cherokee purple mater with some course salt made a great side to cut through the fatty meal. Very tasty meal.

Fugg, I had a 4 pc chicken dinner with Jo Jo's from the gas station!! Actually I worked a double TOO days ago and my day time guy covered for me so I ran home Monday morning on no sleep just to see my wife and family......anyways the in laws called and had us over for my Birthday dinner..........Deep fried Perch!!!! Freaking awesome. They know how much I love that and they fish all the time so all in all a great dinner last night.

no recipes tonight. cooking with fresh stuff on the fly. grill seared venison loin, pan fried chanterelles with garlic, fresh thyme, lemon juice, and salata with cukes, onion, tomato, jalepeno, fresh thyme and mint. livin' large for a Monday night. I might have to take a day off from work to try and find some more chanterelles before they are gone. excellent fungus. as nice on my plate as morels, maybe better.

Best dishes I've ever made weren't meant to be duplicated. Cooking on the fly is pretty rewarding. Sounds like an amazing meal!
