Wife had dinner waiting on me and she nail it! Just got home from the courthouse. First day of jury duty, four more days to go.

Backstraps were stuffed with breadcrumbs, mozzarella cheese, garlic, olive oil and basil.
Sauce was a marsala wine reduction with garlic and basil.
Red skinned garlic mashed potatoes.

Another long day at the courthouse. Wife cooked another stuffed backstrap for me and it hit the spot.

Pretty much the same incrediates as the other night with the exception that the backstrap was wrapped in bacon this time and the sauce was a red wine.

Kung Pao Heart ! Thanks to Dan for his earlier recipe post. Since I had leftover Chinese, I soaked the heart for a bit , sliced it, soaked a bit more , then added a small portion of sliced heart. I fried in butter, onion & garlic, then added to the leftover.

Due to my bout with Covid, there's things I still can't taste, & the heart is one of 'em. Mighty tender though !
