What's For Dinner?

Wife had dinner waiting on me and she nail it! Just got home from the courthouse. First day of jury duty, four more days to go.

Backstraps were stuffed with breadcrumbs, mozzarella cheese, garlic, olive oil and basil.
Sauce was a marsala wine reduction with garlic and basil.
Red skinned garlic mashed potatoes.

Another long day at the courthouse. Wife cooked another stuffed backstrap for me and it hit the spot.

Pretty much the same incrediates as the other night with the exception that the backstrap was wrapped in bacon this time and the sauce was a red wine.

Nothing special just chicken wangs. It was good. Baked in oven 400 degrees internal temp 190 for 45 mins. The rub i used on em.... was pretty good but not gonna put on chicken next time. It was alright. Gonna try the rub on beef.

Butchered some adult extra male quail yesterday. Momma threw some in the instapot today. Yummy

Made venison fajitas last night for dinner. Garden peppers, onions, venison marinated in Italian dressing for 48 hrs. Browned it all up and added some Szechuan sauce and seasonings. Damn it was good!! Whole family devoured it! This is all that was left for lunch for today!

Wife boiled some skrimps, we ate them in the dark by flashlight so no pics.

Kung Pao Heart ! Thanks to Dan for his earlier recipe post. Since I had leftover Chinese, I soaked the heart for a bit , sliced it, soaked a bit more , then added a small portion of sliced heart. I fried in butter, onion & garlic, then added to the leftover.

Due to my bout with Covid, there's things I still can't taste, & the heart is one of 'em. Mighty tender though !
