I admit, I waste the rib meat. They make it look easy (kinda) and get a pile of meat.
I generally waste it also. I don't think the amount you get is really worth the effort AND I really dislike the mouthfeel of the more waxy venison fat when cooked. But I did try the pressure cooked and then grilled ribs recipe from meateater and was impressed. But cutting them up is challenging and vacuum sealing with sharp edges is another p.i.t.a. so i don't do it much.
