Finally pulled the trigger. I’d never rode one before. Damn….these things are a freaking blast! Even with no power, it’s not a horrible pedal at all. 28 mph top speed, cadence and torque sensors, 750 w…can’t wait for the delivery.

What would be the difference in the ride, between a smaller diameter tire and a large diameter tire e-bike? 
Typically, the taller tire size would provide a better ride over rough terrain. So, why is the smaller tire diameter even offered?

I would never attempt to ride an e-bike for the purposed for which I own one, on narrow tires. It's probably fine for nice lease roads and flat fields, but it would be treacherous in my neck of the woods.

I'm referring to tall tires vs. short tires, not fat tires.
A standard mountain bike that has 29" tires will ride smoother than a standard mountain bike with 24" tires. Taller tires will go over bumps, rocks, sticks, etc. with less issues.
Got ya. I'm sure some engineer somewhere who's much smarter than me knows that answer.

I think you answered your own question. With the two sized tires hitting the same object, the larger tire will have a less steep angle of attack to ride over and down the other side. A smaller tire will have a steeper angle of attack requiring a quicker rise over a shorter period to overcome the obstacle. The shorter tire once over the obstacle will either fly off or slam down depending on speed. Whereas the larger tire will stay in contact longer and be more apt to bridge the gap on the back side between the object and the ground. Like trying to roll your floor jack over a zip tie vs your truck rilling over it. Now, what's the difference between the two offered sizes? I'm not sure, but they offer the bigger one for a reason and geometry says it wouldn't be wasted money.
I bought this Maverick from Steve at Hardcore Ecycles in Sunbury last year. Had a regular ebike with pedals before this one. This thing is badass and have used it alot. Nice not having pedals or chain and no bar to step over. You can sit or stand to ride.The platform is plenty big to stand and ride.I like standing and cruising slow while looking for sheds. Has plenty of power and a great battery. Built like a tank.
