Too many lymph nodes in the neck. Deer have something like 26 nodes in their neck which are used to filter out infection, toxins, and chemicals. I'm not eating it. You ever cut up a deer and find this white spot the size of a malt ball and it's brown in the middle. That's a lymph node.
