Deer Shanks.

Smoking the front leg isn't a meal. More like a nice snack, like the breakfast rolls. Just fun to do on a crappy day with football playing.

I've done a whole front shoulder in a crockpot before and made pulled deer sammiches. Minus the shank because I usually cut them off and used a filet knife to trim off the silver skin before grinding.
 
You guys have given me some ideas. I usually grind everything except the backstraps and inner loins.
We started running a lot of loin and roast Chunks through a cuber. They can be used for all sorts of dishes. The hand crank Cuber is much easier to run than you even can imagine.
