Thanks guys. We picked just shy of another 5 gallon bucket of beans last night as well as 2-5 gallon buckets of tomatoes. Making some salsa tonight and more juice and quartered tomatoes Friday.

Yea the kids had fun picking them. I'm glad the veggies are done for the year Phil, now its time to put meat in the freezer and get them kids out a little with the crossbow.

Yessir! Erin has had one heckuva time trying to keep up with the canning. We have more peppers and tomatoes awaiting her next day off right now. I need to go pick up some more apples as they are dropping regularly but she can't keep up. I don't have the time to help her. Looks like the apples will keep the deer happy.

I had hundreds of peppers (jalapeno, green, red, anaheim and giant marconi peppers) that were going to go to waste. I was thinking of what to do with them and decided to do some cooking prep with them. Cut some onions and peppers, seasoned and sauteed. Smoked some Jalapenos and made chipotles. Stuffed some jalapenos, anaheim and marconis with my cream cheese mix. Sealed them all up and threw them in the freezer. I will put them on the "Whats for dinner" thread when they are actually used.

I did that last year, and my roomates couldnt stop eating them! I spent like 2 hours packing peppers, while they drank. Hell I got done, and they were hungry started frying them up! hahaha Great choice!

Last weekend I picked every pepper in my garden to close out the year. Like Charles I simply washed them up, cored them, sliced, and bagged.
I ended up with 5 gallon zip lock bags full. Mamma will be cooking them up for winter soups and chili. Mmm...Good.

I am still getting some outta mine so if I get enough Anaheims and Marconi's I will stuff them with a sausage mixture.

Tip: if stuffing peppers don't fight it. I used all kinds of things to try and make it not so messy then a light went off last night. Grabbed a piping bag (used to decorate cakes) and left the tip out. Made quick, clean work of it.

Also when stuffing cabbage rolls.

Rinse them fresh, lay out flat, then put into freezer.

Upon removal they will be limp and limber.

Ready to fill your favorite meat/kraut, then wrap, and fold.

I'll be doing a bunch for Deer Camp once my kraut is done....about another week.
