Wow, sorry to hear this Phil. I have no tolearnce for thieves and I would be digging the ditch. I'd even go as far as making it a pit fall if it was your property. A couple 1-2' spikes, that blow his tires out so he can't ride home, or maybe even get one in the foot. I don't understand why you would need a lawyer if it is your property. Can you no longer do what you want anymore (rhetorical). Nothing like some .010 steel braided cable strung between two trees so.....ok I'll stop. This chaps my arse and is one of the main reasons I do not put up cameras on any property that is not owned by me. Best of luck in catching the perp and prosecuting him to the fullest!
