We're boiling sap right now. Collected about 70 gallons this week. Rule of thumb is 40 gals of sap makes a gallon of syrup. It's a great thing to do, having the syrup to use and give away is a lot if fun. Used 10.6 gals of propane so far (got 3 refills about 6 o clock

A buddy and I did 120 gallons yesterday for 2-1/2 gallons of syrup. All collected from 13 trees last week. He said you need something like 100-150 gallons of sap from birch trees for a gallon of syrup. No thanks.

I wimped out and took my sap to a neighbor (less than 2 miles away)who just put in a state of the art evaporator. He tests the sap for sugar content then gives you 1/2 the estimated yield. Most sap is 1-2% the highest he had received was 2.8%. Mine was 3%. 30 gallon of 3% sap = 1 gallon of syrup so I walked out with 2 quarts.

Picked up 84 Ball wide mouth pint jars, 6 quart jars, and a handful of half-pint jars today from local person on Facebook marketplace. Also came with a bunch of lids and rings. All to the tune of just 50 bucks. Felt like a pretty good score. Once I finally settle in to the new place and get some free time again, we’ll be prepped and ready for some serious gardening and canning activities.

I’ll be bringing a lot of jars to paint creek for anyone who wants them...got them at an auction dirt cheap. Offered them to Jesse when I came out in november but he had just inherited a lot and had enough.
