Just finished butchering my buck. Sauteed some heart and liver with hen of woods an onion.

Korean style short ribs aka flanken style.
Marinaded all day in a mixture of soy sauce, brown sugar, mirin, garlic, onion, ginger and honey.
Cooked hot and fast and i only singed a few hairs on my hand and arm.

Made up more mexican seasoned deer burger for burritos ( w/ sour cream ) & another batch of refried bean / venison dip which includes diced ham & jalapenos....

How'd that added ham do in the mix?

I really don't know yet. I only had a small taste since the burritos akready filled me up . The ham & jalapeños were diced quite a bit, so it may be not have the effect like yours did.

Grilled on the smoker tonight and we ate by the fire I had going all day while I cleaned up our landscaping. Great day to catch up on stuff before hunting for my first time this season late next week.

Burgers slathered with Whomp Sauce and topped with French Fried onion rings then a slice of cheese.

We had sausage gravy and biscuits for breakfast this morning and potato soup and grilled cheese this afternoon.

Pheasant breasts with a garlic honey mustard sauce - a definite hit
Duck breasts with sweet and sour - okay
Spatchcock duck with herbs de provence.... good but the wings and legs were really chewy
Duck breasts with ribs still on.... cooked nice but with only salt and pepper it needed something more

I need more duck recipes.... I've never cooked it before

In preparation of our oos hunt momma hooked us up w some fine meals. This evening is cream tators w deer burgers w mushroom and onion brown gravy.
