I smoked these 3 racks of BB loin ribs using Meat Churches Matt Pittman’s recipe and after about 4.5 hours at 275 with half the time wrapped in double foil I’d say just what Matt says, “I ain’t mad it at!” Lol

Today I’m doing another MC recipe for EXTRA crispy wings Matt got from a guy named J. Kenji López-Alt that double deep fries with an hour rest period in between. First fry is at 220 for 20 minutes then 1 hour rest then 400 fry for 10 minutes sprinkle with MC Holy Voodoo then toss Buffalo sauce or whatever your choice of sauce may be.
Here’s pic of 220 deep fry and how they looked after 20 minutes pre-rest.
