Venison (meat) loaf and mashed taters... A basic meal but what is it about meatloaf that tastes so good???? And tomorrow it'll be sandwiches!!!!
 
One pork belly split and then cured two different ways then smoked over Apple to make BACON
Sliced to approx 10 slices to the pound and bagged at 8-9 slices per bag.

PRIME ribeye cooked over apple wood, grilled asparagus and mashed, cheesy cauliflower. Damn good...

Looks good Jamie! Never made risotto myself, but have had it. Very tasty.

On week 3 of eating healthy and things are going well. Had oven roasted chipotle chicken breast with my Carolina mustard BBQ sauce, yellow squash cooked in butter and apple cider vinegar, and chipotle seasoned sweet tater fries. Very tasty, but I'm still hungry! lmao
 
risotto done correctly really is something special compared to some other "rice dish". Arborio rice is kind of a pain in the ass to cook, but is totally worth it if you appreciate such things. My wife is Italian and genetically predisposed to cook risotto, meatballs, marinara sauce and most other dago table fare better than me, so I usually defer to her to make risotto. lots of variations to play with risotto, but shitake mushrooms and peas belong together.
 
Steak and eggs tonight. Venison steaks seasoned with my secret rub and pan fried in grass fed butter. Four free range eggs scrambled with green onions and topped with a little bit of cheese, fresh salsa, sour cream and hot sauce. F'n tasty!!!

lemon panko crumbed saugeye with browned butter, rosemary rice, and fresh avocado(with S&P and a healthy sprits of fresh lemon juice).
