What's For Dinner?

Sirloin's are tonight's main dish

What kind of cook time and temp on this lovely chunk of meat?

Salted it good when came off the trimming block about 1000. Added my brisket seasoning about noon.

Had the stick smoke rolling about 1230. smoker stayed about 175°-200° wild cherry clean snoke. Put the roast on with an IT of ~65° @1230.

Just kept plugging little staves and good airflow, got worried my instint probe was off as after 4 hours it was holding in the ~120° IT. After 5 hours it hit 133° and came off to rest for 10m. Sliced and thats what you see.

I like every part about this I have just that cut that needs the exact same happy ending....
 
Venison sirloin coated with my blackening mix, cooked sous vide with some butter, patted dry, brushed with beef tallow and dusted heavy with Chanterelle powder, finished on the on the searing grates. Traditional Panzanella bread salad.

The sirloin is a bit if work to clean up, but one of the tastiest cuts from the hind quarter and is a nice size for a single serving. The texture of this steak was on par with tenderloin. No joke.
 
I had two pumpkin 1 apple crisp and 3 plain Wayne county fair style donuts, the box holds 12

I'm probably good till next year but they are a favorite of mine. It would be a 30 minute drive the wrong way unless we end up at Jesse place for Strouds (even then it's out of my way but allow for more highway driving) to get some for Strouds
