Finally ..... I got my steaks right using the SV. It took a couple previous attempts . I had them in water for about 7 hrs this time . I would imagine less time, but it can't hurt going longer. My hibatchi didn't produce the fast sear I was hoping for, but was very enjoyable using just the same & did provide a good taste. .....

Grilled some Bone in pork shoulder blades I think is how they were labeled. Rubbed on some PS Texas BBQ rub with some blackened seasoning and brown sugar seasoning. Let them sit in fridge for 8 hours or so then let them smoke for 25-30 minutes at 160-170 while I swept up my grass clippings then bumped it up to 350 to finish out by grilling. I added some SBR honey/brown sugar BBQ sauce. Tasted pretty dang good. Juicy and flavorful .....😜🤗👍🏻
