Yellow/discolored fat - would you?

Yummy slow cooked roast in a lymphatic gravy. There's over 150-200 nodes in the neck, to include the two typically pulled for CWD testing. That small neck roast contains about half of the deer's lymph nodes. I typically trim my meat pretty lean throughout so a big hunk of lymph node neck isn;t appealing. If I want a roast I take the sirloin tip or "football" off the front of the hind quarter.

You are correct! But if you know how to take the whole front concave section out of the neck, you gain 6 -12# of roast or grind. And it takes about 20 seconds.
