You are correct! But if you know how to take the whole front concave section out of the neck, you gain 6 -12# of roast or grind. And it takes about 20 seconds.Yummy slow cooked roast in a lymphatic gravy. There's over 150-200 nodes in the neck, to include the two typically pulled for CWD testing. That small neck roast contains about half of the deer's lymph nodes. I typically trim my meat pretty lean throughout so a big hunk of lymph node neck isn;t appealing. If I want a roast I take the sirloin tip or "football" off the front of the hind quarter.
