What's For Dinner?

Red Flannel Hash. I have to have this at least a few times every month and sometimes a few times each week :D

It's a mixture of diced potatoes, onions, garlic, beets and steak with lots of italian seasoning and a few red peppers to spice it up. Easy to make in a frying pan and very filling. :)

just got the spare ribs for tomorrow rubbed and in the fridge. mix of chili powder, cayene pepper, paprika and a bunch of brown sugar. goin in the smoker around noon.

Marinated thin sliced chicken breasts and hot dogs. I marinated the chicken in Italian Dressing for about 30 hours and applied Sweet and Sour sauce while grilling them. The dogs are just being grilled for the hell of it and primarily what we all munch on for lunch the next several days.
The sides are mac and cheese and baked taters. Yummy...

Dutch Oven Chicken Enchiladas ... that's what's for supper ! Nothing beats outdoor cooking whether you're just outside the house, up in the woods, or even better .... Deer Camp. Today I decided to prepare this feast which even the local neighbors are overcome with giddiness of anticipation....

Well, here I am again with show & tell ... burp. We had a early supper since I started smoking @ 10 for a 5 lb bird which was done sooner than I remembered it would be. I'm off work today as well, so with no one around to bother me, the day was mine. I like to consider myself strictly a hickory guy, but I bought some mesquite the other day in preparation for some rib eyes that I'm going TOO cook on a new toy that I ordered from Cabelas. Mesquite just sounds good, but it's not what I thought it would be for the bird. Anyway, enjoy once again !
