What's For Dinner?

My honey got me a new Cast Iron skillet for Easter....after seasoning it up good Sunday I put it to use today! Made a fresh apple pie in it then for dinner...country fried steaks, mash potatoes/gravy, corn and rolls!

When I started eating Paleo, I abandoned one of my favorite meals of all time. Stood on a mountain side in WV today in the rain with an old timer while we talked about how good deer meat was. I had this craving all the way home. Damn tasty. Loin chunks in a spicy gravy with egg noodles and cottage cheese. One happy dude right now!

Tonight's wing nite was my own concoction .... hickory smoked wings topped off with bbq sauce, sour cream, cheese & bacon !


I was waiting for you to post this up here, saw it on the FB. Looks delicious man! Some helluva good grilling there.

Where's the pic of the "neighbor girl" tho? lmao

That sounds great Jesse. I just finished a batch of deviled eggs. I tried smoking them again but the flavor didn't turn out like my cast iron FB page said. I'll peel them & then cold smoke them next time. It's not like I'd really taste the flavor with all this on board...lol




I did learn you can take a raw egg & after smoking them, they turn out just like a hard boiled egg. These will be great with my smoked chuck roast in another hour.
 
My eggs didn't come out with the hickory flavor I had hoped for. They were really good just the same. All this smoker business today has me wore out, yet quite happy...

Ho-Leee_chit.........man that spread looks GREAT!! The smoked eggs has me curious too. You say they didn't turn out like you had hoped? Not enough smoke or too much??

Chuck, I think I'm just chasing my tail on this one. Others have said that after a 2 1/2 hr smoke, they can taste a slight hickory flavor. You certainly don't want the eggs to pop so three hrs might be too long. My original intent was to smoke some up, put some hot sauce on 'em & drink beer. So, after trying this two times , I dunno. If I try it again, I'll remove the shells first & then cold smoke them using my scent smoker like I did the cheese last year.


On another note, looky what's coming to my driveway soon !!





This is a Old Country BBQ pits " Pecos " model. I love the welds on it & there's a baffle inside to deflect the heat away from the opening of the firebox. My gas / charcoal smoker is going to crap on me, so it's time for a replacement.

Today I'm finally getting to break in my new smoker. The burnout is done, the seasoning is done & the tuning plates are installed & seasoned as well. Here's a sneak peak of part of my menu for tonight. Ribs & pork loins stuffed with fresh pineapple & cream cheese with bacon wrapped on the outside topped with brown sugar.
