What's For Dinner?

Pan fried Chicken of the Woods with a side of sauteed Chanterelles finished with some fresh chives and white wine vinegar. Cucumber tomato salad fresh from the garden today. Both of the shrooms gathered today, too. Eating seasonal kicks ass!!! T&T to wash it down.

Let's get this thread back on track. Hank Shaw's Chanterelle pasta. Fellas, this is an especially wonderful recipe. I followed it to the letter a couple of times then veered off in my own direction because I could. Lots of possibilities. Tonight, I embellished with some grilled green beans that I picked this morning and mixture of various grilled fresh peppers I picked today, too. Of course, the shrooms are the star of the show, but the supporting cast can be whatever you like. Charring the green beans and peppers added a layer of flavor that you could not get anywhere else. Simple and delicious.

Deep fried Chicken of the woods and Jalapeño, Jalafuego, and Pizza Jalapeño poppers. Might be the best job I've ever done cooking Chickens. Dipped then in various sauces, but Sweet Thai Chili sauce was the best. I did half of these with traditional bread crumbs and half with Panko. Panko just a little too much crunch with the soft texture of the shrooms.
