I’m filling this with syrup and going to let it sit for 6 months or so before we bottle it.

Jouneryman has distilleries in Michigan and Indiana. I bought it from Midwest Barrels in Lincoln Nebraska. It's only 5 gallons and they had a variety of sizes from different distilleries to chose from.Nice, should add a little flavor too it. You get it local, Sam?

The advice I got was to get a new, freshly emptied barrel every year. But I’m thinking pouring a fifth or 2 of cheap whiskey in the barrel for a few months should “refresh” it. I need to do more researchCool! Can you reuse that barrel next year?
I’m opening that bottle for Easter waffles! Thanks again…Had 170 taps this year. Collected about 1650 gallons of sap that made 36 gallons of syrup, my 1/2 will be 18 gallons.
Got a fresh barrel and filled it today. View attachment 192954
We have waffles for Sunday breakfast. So the syrup comes in handy….I have the worst desire for pancakes now for some reason…
