You eat that Yankee crap....carp, not much difference in spelling. We don’t have that problem down here.
We don’t have the fishery you have. Up north we have Lake Erie, the rest of the state doesn’t have much to offer without a boat.
We don’t have silver carp yet, but I still like the idea of trying common carp.

I’m sure they are edible, I just love picking on ya lol. Most game can be prepared correctly and taste appealing.
My solution is ride the river, when they jump blast them with shotguns. Won’t have a carp problem for long. Last year while hunting Arkansas we messed with them when we were scouting. It was fun and had two jump in the boat. Bigger than they looked jumping out of the water.

I always give good reasons for the items I say suck. One of them you quite literally just said yourself.
I've never eaten a carp. But I've sold thousands of pounds of them out of the back of a pick up truck in downtown Port Gibson MS. We'd catch Buffalo, Gar, and Carp in hoop nets and sell them as fast as I could pocket the old paper food stamps they paid with.
