The baker finally got off her ass and put together a loaf of keto friendly bread and some keto friendly chocolate chip cookies. Almond and coconut flours in place of most of the all purpose flour, date sugar in place of white sugar. Now this is not zero carb food, but about 1/2 the carbs of regular. The bread is very tasty, but a little more dense than I would prefer. Tweak it next time. The cookies are 99% as good as her award winning recipe. Hard to believe they only have about half the carbs.

I’ve pretty much eaten eggs and steak since late June. I just got home from a week long hospital visit. Essentially I didn’t eat fro three weeks. I was pretty sure I was gonna die. I came home yesterday weighing 168# and admittedly looked like a POW. Not wanting my mother seeing me that way, I’ve eaten everything I can get my hands on. Especially fruit. A lot of fruit. I’ve also had several meals of rice and chicken and tomorrow I plan to go buy my formerly favorite cookies. When I get back to 180, I’ll clean it back up.
