That's a hell of a idea right there! They look great at first but after years of dusting and keeping clean they get beat up. Fiberglass would last forever! My 11 pounder hangs in the shed now lol

You can get a exact fiberglass duplicate made, place a 8x10 framed pic under it. That way you get your mount and get to eat the meat. Nothing goes to waste.
