Sounds good, how do you think it’ll work on venison steaks?

I’d say it would work pretty good. I didn’t marinate the tenderloin. Didn’t really need it either. I’d say if you did a 1-2 day Worcestershire marinade in the steaks...it would be the bomb with that sauce you put on it.

it works great with venison loin chops or boneless top round steaks. you can use brandy instead of cognac, and you don't have to flambe' it. "Dianne" sauce is pretty simple and friggin' delicious. chicken Dianne is quite nice, too.
