Poured some of this liquid gold tallow over it before wrapping it up tight. Smoked till flat internal temp was 178(surprised me it hit that in 4 hours at 250, point was 159)
Fat side up uncovered and fat side down during the wrapped portion. I’ll pull off smoker when flat reaches 205ish
