Deer Loin, salted then rubbed with Meat Church Honey Hog BBQ and pepper, Traeger at 225 until internal temperature was about 120. Then seared on grill. Served with broccoli. It was fantastic!

Poured some of this liquid gold tallow over it before wrapping it up tight. Smoked till flat internal temp was 178(surprised me it hit that in 4 hours at 250, point was 159)
Fat side up uncovered and fat side down during the wrapped portion. I’ll pull off smoker when flat reaches 205ish
