For a duck hunter, this right here is the holy grail of the dinner table. Cajun-seasoned, and blackened skin-on Bluewing teal halves, laying on a bed of rice and quinoa, with a little soy sauce on top. Cooked to rare, this is absolute perfection. If there's anyone here that thinks they don't like the taste of duck, I guarantee this dish will change your mind.

And just imagine... As good as that batch was, this teal is at least twice as good. If I could only hunt and shoot one species of duck for the rest of my life, it would be Bluewing teal...no question.
Fast little birds. I used to hunt them out by Cooley canal back around the time they put the dike wall in. Man, that was a minute ago😂

It is by far the best tasting duck. The only duck that don’t have a liver tastes. Green wings are just the opposite. BW are my favorite.

I just salted and rubbed then smoked for 5.5 hours at 250. No turning,foil or slathering involved, just me and wife tearing into the mother fugger while catching up on the Buckeye ass whuppin.
I taped games today while I pressure washed shit today. Lol
