My BIL and I just wait till they go on sale at Krogers for .99-$1.99/lb and buy several to stock in freezer. Trim off fat for rendering during the smoke and strain through coffee filter like Chuck does to save tallow for future frying. Makes smashburgers taste unfrigginbelieveable!!!
I’m soaking up all of this info like a sponge!😂👍

We both split a rack of pork bb ribs two nights in a row and they were awesome.
I also smoked a 10.5 pound brisket as well that I just let rest till it cooled down to room temp to put into fridge. Going to split and vacuum pack for get together in near future.
