What's For Dinner?

Well, here we are again Toozers. I wanted to try out my new oval dutch oven I just received. I've had ribs on my mind & though I'll be the first to admit it seems sacrilegious to do such a thing in a D.O. when I have a number of smokers about. It's just one of those things that I had to try.
I wanted to add some color ....
Then comes the main attraction .....
My sauce is part Sweet Baby Rays, Franks & ranch dressing. The peppers will hold the meat off the bottom & I added some beer TOO. If I had it to do over, I would add the sauce as the meat was finishing.
The end result ....
I also made Twice Baked Potatoes, topped with bacon, cheese & taco sauce in there somewhere....

They were delicious. I now have the meat sweats and can't get comfortable! Thought I'd have some help from the wife, but it was all on me!!!

We bought an new infrared grill a while back and I've been wanting to attempt to smoke something, just haven't got around to it yet. We did have bacon-wrapped BBQ chicken last night stuffed with banana peppers and cream cheese, and it was delicious!

It's truly a mystery how we can eat like this and still be such amazing physical specimens!

I'm a specimen alright! Sadly, a chubby one. Used to be pretty cut, but not any more! Marriage and a kid have a way of plumping a man up!!!
