13# bone-in pork shoulder from our 2019 hog. Making space for spring '21 hog. Overnight at 225 on the Trager, which is roughly 215 in this cool air. Up early to wrap, then finish while I head to the farm and do some "deer chores". It'll finish about the time I finish, then into the cooler until dinner time. Gonna be a good feed tomorrow!

155 at 6:30, let it get to 158, then wrapped. Temp check at 11, but I'm guessing 1-1:30 for finishing.

Coasted into 204 at the 15 hour mark. Gives it 4-5 hours in the cooler before the shred. I feel like this is gonna be a good one. Damn fine cut of meat from an animal I helped butcher. Not much better than that.

Yeah it’s been a wild ride. Found one at AFEES and ordered it, went backorder and 3 weeks later it canceled saying they couldn’t get it.
More searching for a deal and found one at cabelas. On sale and was able too still get a military discount on top of it. Had it shipped too our closest store which is an hour away below Charlotte in Fort Mill SC. Didn’t have too pay that tax as well.... We’ll they said it could take 4 weeks too get.Yep, took 5 weeks too get.... So far this has been one fiasco after another

I have the same one pictured above. I love it. Did bbq chicken on it tonight. Smoked some salmon on it the other day and it came out amazing. I'll bring it to Logan

Just read through this thread from the beginning....Jesse also got the Traeger. He’s posted a lot of good looking food porn from it also. I’ll have to check into the differences and the pros/cons each brand has (Pit Boss vs Traeger). Also, @Big_Holla started this thread in 2017....you were leaning toward getting a gas/charcoal grill, did you ever end up getting a smoker?

How do you like yours J? I’m going to get one...planned on a Traeger but the Pit Boss is looking good also. If memory serves me right, I believe Giles recently got a Pit Boss as well.

We’ll be using it for the first time next week when the kids come for the 4th. Ribs are on the menu Initially and a pork butt or two bringing up the rear.....

40 minutes is about right, I’d check them with a meat thermometer too be on the safe side 165 Is where I’d pull them .
