While I'd rather be fishing for them our local supermarket Publix, in late June when the sockeye run have a great sale on wild caught red salmon. Got a couple fillets to test the smoker for a 10# order. Got them brined last nite and done this AM, no albumin buildup, wild cherry wood and so dang good.
I vacuum seal 8oz portions to have as long as they last... which isn't long.

Shrimp and grits, smoked ribs, and smoked chicken halves last night by the lake. Made for a mighty fine evening!
Love shrimp and grits! We’ve got 3 racks of ribs for when the kids come this weekend! Looking forward too some smoked queso also!

Tuna noodle casserole. Nothing fancy, but it’s one of my favorite comfort foods. Wife always made it for my first meal home after a trip/deployment.
