Cool weather was taking to me, had Christine make some white chicken chili.

Did my very first smoke today. Smoked a 7.5 lb brisket.

Rub: Private Selection Cracked Peppercorn and Texas BBQ mixture
Mop Sauce: 2 cups beef broth,1/4 cup Apple cider vinegar,2 tbsp worchestershire sauce.

Sprayed with mop sauce and rubbed down thou roughly, Smoked at 225 for 5 hours uncovered spraying down several times during that span.
Sprayed down again and poured remaining mop over brisket then double wrapped in foil and smoked additional 3 hours at 225.
Removed and let rest in cooler for 2 hours. It was very good and by all the compliments I’d say it was a success.
Prep spray down and rub down


3.5 hours in


After 8 hours smoking and 2 hours resting
