What's For Dinner?

Well guys, heck of a weekend! Trump had a big rally down our way and I had the honor and privilege of rolling with USSS in the motorcade! I knew my guys were going to be involved but to actually work with them and have a CAT agent in our truck was freaking awesome. Definitely the highlight of my career so far.
Ended the weekend out with a big fish fry at church. I fried catfish fillets, catfish cheeks, and gar nuggets. Mom fried hushpuppies, my wife cooked potatoes, and made coleslaw. Definitely a weekend for the books. Lotnof dang good looking eats on here lately 🤘🏻🤘🏻

Was planning on cooking up a flank steak tonight but when I stopped at the store for eggs this morning, I couldn’t pass up the clearance bin Prime NY strip and 2 short ribs. We had the strip with mushrooms and salad around 7. Still cooking the short ribs at 250 * Getting ready to wrap them and finish them off for my snack during the Duke/NC game.

When we lived around America getting military moves every 3-4 years I picked up local recipes. Just made a batch of CO High Country Chilli Verde for Turkey camp... and then some. About 3 gallons in this one.

Got that one from the Mountain Shadows restaurant outside of Paonia, CO when I was guiding elk trips as a MWR volunteer for the Outdoor Adventure Program.

The secret is frying the cubed pork until crispy edges and smoke for 90mins. Then add to your base. Brings a real nice caramelized meat up into the slow heat.

Not a meal, but this is the easiest and one of the most addictive snacks you can "cook." Smoked almonds.



What I have been following for them is super easy.

-Pound of almonds
-2 TBSP melted butter
-1 TBSP salt
-1 TSP garlic powder

Melt the butter, mix everything in a gallon ziploc bag. Spread the almonds on foil in the smoker. Smoke at 225 for about 2 hours.
