I'm on my own this week, so we're celebrating with a bit more surf & turf ....
One medium yellow potato, one left over pork chop, 3 eggs, all fried in lard and seasoned and then drizzled with hot sauce.

Dinner is usually better as I have choices. Rice, salad, pork loin and chicken
She came home to salads and ribeyes smothered in organic white mushrooms. Fried steaks in the new beef tallow and after pulling steaks off I added some olive oil to tallow remaining in skillet and sautéed the mushies. Pretty dang good med/rare steaks.
